Ich habe nur das oberste Paket in der Liste (Contao Open Source CMS - Version 4.4.31) versucht zu aktualisieren.

Nein, das reicht nicht. Du musst über den Button "Pakete aktualisieren" eine vollständige Paketaktualisierung machen.
Hat bei mir funktioniert. Natürlich bei allen Contao Paketen auf Update geklickt vor dem Ausführen.
Dabei wurde für dbal ein Downgrade durchgeführt.
Contao 4.4 bringt nun einen eigenen conflict Eintrag mit:Code:- Downgrading doctrine/dbal (v2.9.0 => v2.8.1): Downloading (100%)

Ich komme ebenfalls nicht von 4.4.31 auf 4.4.32.
Und ich habe "alle Pakete aktualisieren" angeklickt.

Notfalls könntest du die Version von "Contao Open Source CMS" auf "~4.4.32" setzen und danach alle Pakete für ein Update markieren und danach eine Paketaktualisierung durchführen.
Per SSH-Konsole kommt:
Alternativ könnte ich noch in der JSON-Datei wie vorgeschlagen alles auf 4.4.32 setzen und falls erfolgreich, wieder zurückstellen. Das probiere ich die Tage malCode:/usr/bin/php7.1 contao-manager.phar.php composer update --with-dependencies
