change theme

I have a new install which, unfortuantely came in with "Music Academy" and its dummy data. I went through the tutorial to create a new theme (as best I could...it's outdated0. Now I want to apply the new theme and get rid of "Music Academy". I do not see anywhere where I can apply a new theme. I just want a simple main column only layout.
Any ideas? What am I missing???

The new theme will be take effect, if you assign the corresponding "Page layout" in the page of type "Website root" (back end module "Site structure").

I must be missing something. when I go to site structure the only thing listed is "Music Academy".

"Music Academy" is the name of the "Website root" from the demo front end template (sometimes called "website template" or "Contao template"). In the back end module "Site structure" you can add your own pages and your own page tree or you can rename/delete/move etc. the existing pages accordingly.
